    6 to 8 servings

    Beef, flank or skirt steak, cubed -- 2 pounds
    Water -- 5 cups
    Oil -- 2-3 tablespoons
    Onion, chopped -- 1
    Chopped tomatoes -- 1 cup
    Chopped tomatillos -- 1 cup
    Guajillo chiles, warmed over a flame, deseeded and chopped -- 2-3
    Salt and pepper -- to season
    Potatoes, peeled and chopped -- 1 pound
    Carrots, peeled and chopped -- 2-3
    Breadcrumbs -- 1/2 cup
    Cilantro, chopped -- 1 bunch

    Place the beef, water and a big pinch of salt in a large saucepan and bring to a boil over medium heat. Reduce heat to low, cover and simmer for 1 to 1 1/2 hours, or until the beef is very tender. Remove the beef to a bowl, reserving the broth, and set aside to cool. When cool enough to handle, shred the beef with your fingers and set aside.

    While the beef is simmering, place the onion, tomatoes, tomatillos and chiles in a food processor or blender and puree, adding a little water if necessary.
    Heat the oil in a large pot over medium flame. Add the onion-tomato puree and simmer until the puree is cooked down and darkens somewhat in color, about 10 minutes. Do not burn.

    Add the shredded beef and about 3 cups of the broth to the onion-tomato puree and season with salt and pepper. Simmer for about 15 minutes.
    Stir in the potatoes, onions and a little more broth or water if necessary. Simmer until the potatoes and carrots are cooked through, about 15-20 minutes.

    Stir in the breadcrumbs to thicken the sauce. Then stir in the chopped cilantro, adjust seasoning and serve hot with corn tortillas or rice.

    2 cups (2 ounces) jamaica flowers (dried hibiscus flowers)
    3/4 cup granulated sugar (or more as desired)

    Bring 6 cups of water to a boil then add the flowers and the sugar and stir continuously while the mixture boils for one minute. Pour into a noncorrosive bowl and steep for 2 hours. *Note: this flower will stain so don't use a bowl that will stain.



    Finish

    Strain the mixture through a sieve pressing on the flower solids to extract as much liquid as possible. Taste for strength and sweetness. If it is too potent, add water or if too tart add more sugar. Cover and refrigerate until time to serve.

    Mashed Potatoes

    MASHED POTATOES

    Ingredients:
    Mayonnaise*
    Salt*
    Potatoes*
    Milk*
    Butter

    Boil potatoes, smash em. Add mayonnaise, butter and salt to taste.


    Tuna Casserole:
    Pasta shells
    Mayonnaise
    Salt*
    Milk (not required but makes it easier)
    Tuna (not required)
    Eggs (not required)
    Olives (no required)

    Boil eggs and pasta shells. Drain. Add mayo, salt, and smash eggs into it. Add milk and tuna.

    If it looks dry, add mayo Very Happy


    NOTE: MAYONNAISE IS IMPORTANT!

    BROWNIES WITH CHOCOLATE AND ORANGE FLAVOUR

    300gr dark chocolate
    160gr butter (preferably margarine)
    4 eggs
    300gr sugar
    200gr flour

    Melt the chocolate and butter in a large stainless steel bowl placed over a saucepan of simmering water. While the chocolate is melting (careful not to burn it) stir in another bowl the eggs and the sugar until it turns almost white, you don't need an electric mixer you can do it with a wire whisk, then pour in the flour and keep stiring. If you like the chocolate -orange combination you can add a little orange juice and the scrap of an orange bark.
    Preheat oven to 180 degrees C and place the rack in the center of the oven. Butter (or spray with a nonstick cooking spray) a 20 cm square pan.Pour into the prepared pan and bake for about 25 minutes or it depends on how moist you want it to be, but it has to be at least 20 minutes.

    Enjoy! It's realy easy to make.

    why not just orange zest? That should make it pretty orangy. Also these sound good, brownies rock.

    2 table spoons mayo
    3 table spoons yoghurt
    2 table spoons olive oil
    1 table spoon vinegar
    50 gr blue cheese

    you mix it up in the blender

    hhahahha blue cheese is like gorgonzola. it's not expired it's just injected with cerain spores and aged in caves hehehe. it has intense flavour
